Spudelicious! Rosti with goats cheese
Hey Hey!
This is my friend Daniela with her dish for the Cully & Sully Cheffactor competition that is taking place in Ireland this month. 3 people will be picked through public voting and another 2 will be picked by Cully & Sully for the chance to win a 12 week cookery course in Ballymaloe worth €12,000! Crazy money for a cookery course if you ask me but supposedly its the go-to place if you want to become a top class chef.
Luckily enough Daniela is a top class chef already but she is up against other entrants that have managed to get over 4,000 votes so its going to be very hard to beat them at this stage. The voting, strangely enough, is only done through facebook so in Daniela’s case it’s fairly hard to get anywhere near 4,000 votes since she isn’t even signed up to facebook! So in that sense the competition is slightly biased towards facebook members unfortunately. But anyway, i have a really good feeling she is in with a chance of getting picked by Cully & Sully so its not too much of a worry if she doesn’t get that many votes.
I had to take the photo for her so i was lucky and got to eat half of it, and i have to say it was really really really good. Thats 3 reallys! My mouth keeps watering now every time i see this photo. And not just because of my amazing photography either… theres just something about crispy potatoes and goats cheese…
And here is the recipe if you want to give it a try:
“Grate firm boiled spuds; add egg, dash of cream, fresh coriander, crushed garlic, season and fry in a pan until golden. Layer colorful roasted veggies on top, finish off with soft goat’s cheese, I use St.Tola, and bake in the oven until cheese is melting, sprinkle with thyme – voila.
A delightful simple dish, that makes people happy. Great Sunday brunch, serve with smoked salmon, crispy bacon or simply a crunchy green salad … a little gem for palette and eye”
